At Ottavi Kookstudio, we take you on a culinary journey over 8 weeks. You’ll learn classic and modern cooking techniques, from the basics to refined preparations. Each week focuses on a new theme: knife skills, sauces, fish, meat, vegetables, marinades, dough & pastry, and as the grand finale – a Black Box Challenge.
What You’ll Learn
Knife skills & basic techniques – precision, speed, and safety in the kitchen.
Sauces & dressings – from mayonnaise and vinaigrette to beurre blanc and jus.
Fish & meat – filleting, poaching, searing, braising, and finishing.
Vegetables & herbs – blanching, glazing, sautéing, marinating, and more.
Dough & batters – choux, pâte sablée, pasta, gnocchi, and pommes dauphine.
Mystery Box Challenge – apply all your knowledge in your own creative menu.
